I love this---with a vegetable peeler make ribbons with both zucchini and summer summer squash, same with carrots if you like, discard the cores. Toss with lemon juice, olive oil, salt, and pepper. Very simple and quick and, I think, totally delicious.

Zucchini butter!! It's sooo good. I love it as a topping for grilled fish and just by the spoonful. There is an entire thread here regarding zucchini and what to do with an abundance of it. I'd link it for you, but can't from my cell. Just do a search for it using the search function. I'm sure there are a ton of recipes in the recipe area as well.
