Live on a citrus ranch but have never heard of pink variegated lemons. Are regular lemons ok with this recipe?

Meyer Lemons have less acid. Use half orange juice and regular lemon juice.

They are vanishingly rare and scary expensive, so I'm going to say 'yes.' They're a little less acidic than regular lemons, though, so if you can get Meyer lemons, that might be a better substitution. If not, I wouldn't worry about it.
