How much pink lemon juice is needed?

The pink lemons I've bought in the past are very small, like Persian limes, so how much lemon juice is needed for the recipe from 1 to 2 of these lemons?

As a salad dressing, there is no exact amount. You can be flexible and adjust according to your palate and those joining your table.

If you want to be safe, err on the side of less acidity. It is easy to add more but it is impossible to remove acidity from a dish like this in any practical sense.

Taste the dressing BEFORE you pour it over the salad. That rule of thumb is not specific to this recipe, it pretty much applies to ALL sauces.
