I receive a smoked turkey every year as a gift. I use it in enchiladas w/ a red sauce, and in black bean soup, as well as chicken salad. I would find it too strong for a traditional pot pie.

Sure you can. It will be a different flavor profile, but if you like smokey flavor, you'll enjoy it.
