I wouldn't leave it in lemon juice for 48 hours. Just take it out of the marinade now, wrap it and cook it tomorrow.

There's a lot of lemon juice in it, so that's the main thing I'm worried about. Recipe says to marinade for 24 hours, I was planning on cooking it today but I can't anymore so I was wondering if I could leave it for 48 hours
