HEY SUSAN! 5 Years later, but your boy is now on the case. Definitely stuff that gravy boat with the goood stuff, tilt your head back, and let nature take it's course. No amount of gravy is TOO MUCH gravy. Honestly, by your tone, I can tell your underserving your gravy. I'm worried for you. Open your mouth and let it ride Susan. You didn't go to community college in the 90's for nothing. You're war hardened, You can do this SUZE. Imagine you ARE THE GRAVY. This isn't the end, it never is.
Virginia Willis is on the same page as ChefJune, she says: "there's so such thing as too much gravy." https://food52.com/blog/9023-how-many-pounds-of-turkey-and-potatoes-per-person
I would err on the side of "too much." I figure 1 cup per person. My Uncle Mike used to call gravy "Come Back Sauce" because he kept coming back for more. If your gravy is good, it will earn its name, and you surely don't want to run out. Besides, the gravy is so good for hot turkey sandwiches later during the football games. :)
1/4 to 1/2 cup per person. Some people love to drown their turkey and mashed potatoes. Those quantities should give you enough to have leftovers to use with leftovers, or to freeze.

I count on 1/2 cup per person which allows for a little leftover gravy. Then I double it because everyone goes home with a ball jar of layered leftovers and my brother makes his famous Thanksgiving omelette topped with gravy the next morning. :)
