I'm looking for good caramel recipes

I like to give food gifts for christmas, and am riding kind of a high since making my first successful caramel as part of a tarte tatin. I'd love to give a few different kinds of caramels as gifts this year, since my family loves them, but I'm don't really know what makes a good caramel recipe. Any advice would be great!

I've made these caramels many times. I make them plain with a little flakey sea salt on top.
