If recipe calls for 3 large eggs can I use 3 medium?

A large egg weighs 2 oz and a med 1.75 oz so there is a slight difference in size. If this is for baking you might want to add another medium yolk. If it's for savory, then it doesn't matter

probably yes. given that eggs are graded for size (large is 50g, a bit under 2 oz; medium 44g, about 1.5 oz), with a larger number of eggs, you might have to compensate and use enough medium to make the volume implied by say, 8 large. With only 3, there won't be much difference. And/or it depends on the recipe you're making. If the eggs are mixed in whole, probably ok. If they're separated and whites beaten separately, you might want to add a 4th medium white, for volume.
