A recipe I want to try calls for in-shell pasteurized eggs. Can I use regular unpasteurized eggs?

This is for a chocolate silk pie. I use regular eggs for Caesar, hollandaise etc all the time.

Hi Barb. In general, it is advised that to eliminate risk and ensure food safety, you use pasteurized eggs in recipes calling for raw or partially cooked eggs. Some feel comfortable swapping in with organic eggs, or eggs from chickens raised ethically/safely. It is, of course, a personal choice because the risk is not the same for everyone.
