When sautéing a large amount of mushrooms, should I salt at the beginning or end of the sautéing?

It's best to season mushrooms after sauteing them. They contain so much moisture to begin with that will be released in the heat, and adding salt will draw that out faster. You will find your mushrooms steam or stew, rather than brown.
