Is is better to chill cookie dough before baking?

Either is fine! I prefer to shape by hand but dropping by tablespoon keeps them pretty uniform.

For some cookies, yes! It makes them thick, puffy, and soft because it's less likely to spread as quickly when it goes in the oven. I'd recommend chilling for at least an hour, but you can leave in the fridge for up to a few days before baking. However, if you like your cookies a bit crisper, then there's no need to chill.

thanks for the tip. I'm making chocolate chip cookies. For the perfect cookie should I simply drop them on the cookie sheet by tablespoon or shape them with my hands?
