What would go well with salmon gyoza for starters? Ideally a vegetarian main, but fish would work well too. Would welcome any suggestions!

Tom kha gai (Thai street food chicken soup) with firm/pressed tough & veg broth instead of the chicken and chicken broth. Most of the flavor comes from the veg and aromatics, so different but still delicious!
