A question about a recipe: Sean Brock’s Southern Grits

Acf36b15 c248 4a11 af45 8a607ec02309 2015 0203 grits mw 312

I have a question about the recipe "Sean Brock’s Southern Grits " from Kenzi Wilbur. Since this recipe is a "cream of corn", would any of the "cream of grains" ie. rice, wheat, etc. benefit from this cooking method? I can't wait to try this!

I bet it would work w/ wheat. I'm thinking about regular wheat berries, which i soak before cooking.
