Do a google search & you'll find a DIY & where to buy. They are just dried stalks from the fennel plant. Of course it's not growing season now but you can buy fresh fennel at the grocery store.
Fennel sticks are an Italian seasoning used mostly for seasoning meats, my grandfather used to grow them & dry them out. I’ve tried every Italian deli from Boston to NY and have never been able to find them. I’m going to try finding them when I go to Italy this summer.
