I'm thawing chicken to make space in my fridge's small freezer: Decided to pound all the pieces down flat, cover with a thin layer of grapeseed oil, coat with favorite spices and bake on bakesheet in 325-degree oven. Going to serve with quinoa. Easy.

Christina, I don't know if you need fast or if something a little more involved is OK.

I'm addicted to mushrooms and artichokes (and capers, so I also throw some in there), so I especially like Roasted Chicken Breasts with Mushrooms and Artichokes by drbabs:
