We defrost things in plastic bags submerged in a bowl/container (Whatever is handy.) of cool water. Things defrost fairly quickly. One chicken breast should not take an hour.

A long time in the fridge. If you need it faster & it is well sealed in plastic, you can do the water bath method (submerge in cold water.) Even then it'll take an hour or so.
