what's the best way to store black olives bought in a vac pack?

the package contains a small amount of oil, but not nearly enough to cover them all...i'm not going to eat 2 lbs of olives anytime soon...i was thinking jars in the fridge, but using oil or salt water brine? i just don't know!

They've been cured in oil, so no real reason to add more (although you could) and I wouldn't add brine because it won't do those nice oily olives any favors. You may try freezing a small quantity just to see how that works. Sounds like you better whip up a nice tapenade.
