Hi Sallie, I'd use Torrisi's Turkey Breast method: https://food52.com/blog/11723-torrisi-s-turkey. It's a good method even if you don't use the glaze! Since the recipe calls for 2 boneless turkey breasts, 3 to 4 1/2 pounds each, be sure to use a thermometer to judge when your turkey breasts are cooked (since they're larger!). You'll look for the internal temperature to reach 135° F.
