I need a turkey gravy substitute quick! Our brine had sugar in it, and it all caramelized/burnt the juices!

Do you have shallots, red wine, butter and beef stock handy? You could reduce the stock, then saute some shallots and add the wine, simmer to reduce, and then add the reduced stock and a little bit of butter...
