I am having luncheon for 24, serving salmon, filet, salad. How much salmon, how much filet should I buy?

Totally agree with CV and June.
For me, since it is a buffet, you can cut the 4oz salmon or meat per person to 2-3. But to be safe, 3
does sound like thr magic number. 3oz x 24 is 72 oz or 4 1/2 lb. Maybe 5lbs salmon and 5 lbs filet?

Are you expecting your guests to choose between the mains or eat both? I wouldn't serve more than 3 ounces of either for lunch. And unless your guests have already chosen which entrée they prefer, be sure to have extras of each available.

It depends a lot on your guests (are they little old ladies or ex-football players) and whether or not the fish/meat are being served as entrees/main courses, etc.

That said, I suggest a 3 ounce portion of fish and a 4 ounce portion of filet per guest, plus about 25% more so you don't run out. At least here in America, lunch serving sizes are smaller that those typically served at dinner.

Figure about 5-6 servings per head of lettuce (typical grocery store size lettuce) per person.
