Dinner tonight? Chicken, kale/broccoli, pasta?
I'm not sure what to make for dinner tonight, but I have a roasted chicken leftover from Sunday, some broccoli and some kale. I'm in the mood for some mac & cheese (have Colby jack shredded in the freezer). Think it would work if I made a macaroni dish and throw in some broccoli and chicken to round it out? Recipes, anyone?

Thanks all! I decided to go with the mac & cheese non-recipe last night and it turned out great! I was VERY intrigued by Coco's idea to puree my veg and turn it into a green sauce, but was a little lazy to do it. Maybe another day!

That sounds like a good combo and keeping it simple by tossing in the kale and broccoli at the end is a good idea. You could also make green Mac by pureeing blanched veg and stirring it into your bechamel for a beautiful sauce.
