I have a question about the recipe "Sweet and Savory Overnight Roast Pork" from Merrill Stubbs. Would marinating in the rub overnight to cook in the morning be ok?
there shouldn't be any serious consequences, but rubs with salt and sugar will draw some moisture from the meat- not a serious loss in a large roast, but it may be enough to wash much of the rub off- you should probably save any accumulated sludge for re rubbing and basting.
