I use my ThermoWorks (http://www.thermoworks.com/) Thermapen for just about all temp measurement. They also make 2 units with alarm functions, ChefAlarm and Dot which might be useful for hands-free monitoring slow moving temps like syrup temperatures . I use all 3 but the Thermapen is my goto form factor.
