Are you looking for a substitute for mustard in the recipe, or just a different type of mustard? It would help to know what the recipe in question is.

For sharpness, in a dressing you could consider white horseradish, . You might then need something to get it to amalgamate, like some mayonnaise, sour cream or yogurt. Or (again for sharpness) try minced bottled capers and/or anchovies. But it depends on what you're cooking.

Do you have any mustard? I often sub grainy mustard for Dijon, in dressings or chicken recipes.
