I have a question about the recipe "Chipotle Sweet Potato Cheesecake" from Kate on the Lake. Any ideas on a wine pairing for this?

I would serve champagne but that's the easy answer :-)

Gewurztraminer if you want to play off the chipotle, or a nice Riesling to play off the sweet potato.

I think I'd go with a Moscato d'Asti - one with some effervescence. It has the sweetness most Champagnes lack.
