No, that won't work because ghee is pure fat and has been stripped of all the solids.

Ghee lacks milk solids and moisture. Just for fun, you might Google around to see if you can find a recipe specifically for ghee puff pastry.

I think the lack of moisture would be a problem- also with brown butter.

I would not use ghee as a replacement for butter in a puff pastry dough.
