I have taken it out and put it in a bowl of cold water (still in its plastic bag). How will I know when it is sufficiently defrosted?

Well the good news is is that it's a turkey breast and not a whole turkey! It won't take as long. I think it's all about how it feels -- can you bend it around? If you need to speed up the process, you could use the defrost setting on a microwave, if you have one.
