I have a 19lb dry brined Judy bird. Recipe says it takes LESS time. After about how long should I start checking temp?

Hi Sandra,

For a 12-16 lb bird it should take about 2.75 hours after the brining is done. I'd start checking after 1.5 hours to see how it's pacing along and to make sure everything is going to plan since there's a chance it might cook a bit faster. Happy cooking! :)
