Since your turkey breast is brined it's going to cook a bit quicker than a standard breast. Took a peek around the internet at a few sites and for a 7 lb breast, a lot of sources recommend 325 degrees F for 1.75-2 hours. I'd make sure your breast is thoroughly dried, seasoned with a bit of unsalted butter or olive oil and cracked pepper (you probably won't need salt, but you can add it afterwards if you deem necessary). Start checking the breast after 45 minutes or so in the oven, the magic number for doneness is 165 degrees F. Once it hits that, pull it out, let it rest, and enjoy!
