I have a question about the recipe "Cardamom-Vanilla Caramels" from gluttonforlife. This calls for A LOT of boiling. Should we rely more on the time or the temperature? Because mine got to the recommended temp much faster than it says.

With candy you are always going by temperature. (Your pot could be broader and shallower than hers.) Make sure the liquid is heating evenly and you are not just finding a hot spot with your thermometer.
