I have a bunch of fresh herbs i need to use up. Can i make, then freeze chimichurri sauce OR is this something that does not freeze well for future?

Freeze in an ice cube tray then pop them into a Ziploc bag and you always have some at the ready. You can do this with all your herbs , basil, parsley etc.. I always have leftover.

It will definitely freeze fine, but the herbs may discolor (get kind of brown).

Definitely freezes well! (Although if you're using anchovies, it may not -- I haven't tried it that way before.)
