Uncovered. To get nice crispy too of casserole.

Interesting... I never heard of nor thought of Brandade as a casserole. I'll have to look up that recipe.

You're right. Classic recipe is as a spread. But some (thus book, Jacqyes Pepin & NY Times cooking pages) have versions as casserole, with either breadcrumbs or cheese on top.
