Made banana bread, put in iven and realized I forgot to add the sour cream.

So, I after less than a minute, pulled it out, added the sour cream mixed it in the pan. The bread collapsed in the center, but oddest of all, it just would not bake. After an additional 40 min, center was still raw and wet. Any thoughts as to what happened?

Was the sour cream too cold? Maybe it wasn't incorporated into all the batter and too much in the center?

Not to cold, but clearly poorly mixed.
