Re: Momofuko's soy sauce eggs. Any way to know how much sodium is absorbed by the egg? I'm on a low sodium diet.

I'm not sure exactly, but you can definitely taste the soy sauce....so its probably not a good recipe for low-sodium diets. I've never tried low-sodium soy sauce for this dish, but I imagine it works.
