Are you cooking tenderloins or a loin roast?

For tenderloins, you can cook them at 400°F for about 15 minutes, or until the internal temperature reads 140°. Once you remove the pork from the oven, allow it to rest of 15-20 minutes, for the juices to redistribute and for the internal temp to come up to about 145°.

For a loin roast, cook in a 350°F oven for about 30 minutes per pound. Remove from the oven when the internal temperature reads 140° and allow to rest for at least 20 minutes before serving.
