I tried to make truffles with couverture but it didn't work. Why do you think this happened?

Were you coating them with the couverture or making the truffle itself out of the couverture? Since it contains more cocoa butter, it's great for tempering and enrobing, but it might behave funny if you try to make it into a ganache.
