I have a question about the recipe "Apple Turnovers With an All-Cheddar Crust" from Emma Laperruque. Could you use Granny Smith apples instead? Or would the tart flavor not work?

Hi Angela! You can definitely use Granny Smith instead. That's a great baking apple and the brown sugar will balance any tartness.
