I got a 12" x 3" Fat Daddio springform pan recently and am trying to figure out how much cream cheese I would use for this large of a cheesecake. Also, I'm curious of whether I would need to adjust cooking time/temp for such a large cheesecake.

Check out specialty baking sites like King Arthur or Wilton...they (and other web sites) have charts showing volume of various cake pans, which is a first step on way to adjusting recipe.
Also tips on baking larger cakes.
