I think your texture would be way off if the millet is not puffed. But, I've made it with many other puffed grains to great effect. Try puffed Kamut or wheat, puffed rice, popcorn, or any mix that you want up to the volume called for in the recipe. Also, I've substituted barley malt syrup for the molasses and loved it. Any riff on this recipe has been a hit each time I've made it.
