A question about a recipe: Cinnamon Pull-Apart Buns

I have a question about the recipe "Cinnamon Pull-Apart Buns" from Gabriella Simonian. Could I proof these overnight in the fridge? Or, if not, could I do everything but the rolling out/shaping the night before and keep the dough in the fridge overnight? Would love to have these on Christmas morning but I don't want to be stuck in the kitchen! We've got presents to open!
