This cake gets its intense red color from a combination of fresh beet purée and a highly acidic batter. The finished cake has the slightest earthy flavor, but it is barely noticeable, especially with a healthy swipe of cream cheese frosting.

Makes an 8-inch cake with two layers Prep time: 1 hrs 20 min Cook time: 20 min
For the cake:: 1 cup beet purée, from fresh red beets (not cooked)

To make beet puree -
* in processor, cut in large chunks and use steel knife blade
* in blender - cut in large chunks, chop medium fine with water, drain (this * technique works for all relative hard vegetables)
* with elbow grease - use a box grater or microplane

PS With fresh beets, there is lots of color (transfer).
Do this over paper or a bowl, if doing by hand, to avoid staining counters.
Cover hands with gloves or plastic bags to reduce staining skin.
