The recipe doesn't call for it, but instead of putting the paper towel/foil layer on the bottom, I put it on the top instead and it did just fine. My pan doesn't have problems with leaking or letting water in the bottom, so I didn't think that was necessary. But I did think it was preferably to cover the top so drips of condensation didn't land on the top. Mine turned out delicious, so if you wanted to do it I think it would work out fine.
