Scrambled eggs for a crowd

I am cooking scrambled eggs for a crowd. Do you think I could cook the eggs most of the way the night before and continue cooking them the next morning?

I love to host brunch and stratas are game changers! You prepare them the night before and bake them the next morning! Not only do they taste amazing but they free up your griddle/pan space for other brunchy items. If you are baking a strata you can do your potatoes on a sheet pan and make the brunch enjoyable for yourself too!

For scrambled eggs, I am also in the don't-make-ahead camp. It looks quite easy and quick to make right before serving. I have tried this recipe, but it seems pretty quick and straightforward: https://www.allrecipes.com/recipe/57459/oven-scrambled-eggs/

I agree with Nancy. Depending on the size of the crowd, Stratas are wonderful!
Many recipes online and you can change up the ingredients to suit your liking. Have made them many times, easy, and rave reviews.
Good luck!

I wouldn't, for fear of givings guests a salmonella-happy hosting medium.

For safety and happy guests, either cook them that morning, or pick another egg dish you could cook thoroughly in advance, like a quiche.
