I am going to make a 3 cheese Mac n cheese for an event and would like to know if it is ok to make the cheese sauce the day before the event?

Will the sauce be ok in that the oils that separate will blend together again once heated? And will the sauce stay smooth and not curdle?

Sure. There’s no reason not to. You may find you need to thin it a little after it’s been refrigerated overnight, before you add it to the cooked pasta and bake it.
