Can you make sourdough bread using oat fiber,flaxseed flour, and vital wheat gluten?

I want to use oat fiber, flaxseed flour, and vital wheat gluten. Can it be done

Flaxseed flour, is that also called flax meal? Flax is a very oily seed, not starchy. And oat fiber, not oat flour? I mean, you can try but 1) it doesn't sound like there's much readily available starch/sugar to feed your microbes for fermentation and 2) it sounds to me like you'll make a very dense, gummy product. But maybe I'm wrong, I usually stick to wheat and wheat-like grains in my baking.
