To egg wash or not to egg wash?
Making a keto/low carb baguette with no wheat flour and wish to have crispy crust. I am using vital wheat gluten, rye flour, flax meal, almond flout, oat fiber etc. OG recipe calls for brushing with beaten whole egg before baking. Thoughts? I have used this wash before but just read this type of wash is best for brushing on pastries vs using on a crusty bread. Should I use egg white or even just water? TIA!
