Can something else be used instead of white wine?

Is the alcohol in the wine just used for flavor then or does it play a part in the dough?

The alcohol itself should burn off, but it's just flavor- I use a bit of red wine in my pizza dough.

It also adds a bit of sugar, which will theoretically help feed the yeast, but there's already a lot of sugar in this recipe, don't think the sugar in the wine will make any difference.
