Hi! Something I like to do—to break up a layer cake recipe—is bake the layers, cool completely, wrap well in plastic, and freeze those until I'm ready to frost the cake. They'll be good in the freezer for weeks (just thaw at room temperature before frosting). After the cake is frosted, it should stay good for a couple days in the fridge. Just make sure to let it sit out for 20 or so minutes to temp up before serving.
