Baked salmon keep from drying out

After baking fish in the oven and transferring to chaffing pan, how can I keep it from drying out in chaffing pan?

Small salmon piece.

Make a simple sauce of some white wine (simmer it to reduce it by about half), whisk in some butter to melt, add some capers, and pour it over the salmon once it is in the chafer.
