Hi! You could bake the apples for a bit, but I wouldn't put them in at the same time as the sweet potatoes (or they'd turn to mush).

Ditto to what Emma said! I personally love the freshness and crispness that the raw apple brings to this salad. You might want to consider baking half the apple and leaving the other half raw for a contrast in texture (and to see which way you like best!).
